RIBEYE LIP-ON FRSH BNLS CHO

The STX Beef Lip-On is produced from the primal rib. The chine bone, backstrap, lifter meat, feather bones and back ribs are removed. The short plate is removed by a straight cut, no more than 2” from the rib eye at the loin end and 2” from the rib eye at the chuck end. Lip thickness will be no greater than 1.5“thick.
