The STX Beef 107 Rib is produced out of the 103 Rib with the short plate removed by a straight cut, no more than 3” from the rib eye (longissimus dorsi) at the loin end and no more than 4” from the rib eye (longissimus dorsi) at the chuck end. The chine bone shall be removed at a 45° angle. The blade bone and related cartilage shall be removed. No exterior fat shall be removed.
