CHUCK ROLL 1X1 N/OFF MRKT-TRM

The STX Beef 1X1 Boneless Chuck Roll is prepared from a square cut chuck with all bones and back strap removed. The chuck roll tail is removed with a straight cut 1” from the chuck eye (rib end) and 1” from the main muscle seam on the neck end (measured at 1st rib). The neck break is 3 ½ vertebrae from the atlas bone.
